- Hacer bolas de masa y colocar en el interior un huevo de codor de codorniz cocido y un poco de queso rallado.
- Dorarlas en una cacerola con aceite de oliva virgen extra y apartar. En el aceite anterior, freír 5 dientes de ajo, enteros y golpeados, y verter el brandy.
- Dejar hervir 1 minuto y añadir el caldo de ave, el jugo de 1 limón y probar de sal. Mantener a fuego medio-alto y ajustar el espesor añadiendo, poco a poco, maizena diluida en agua fría.
- Devolver entonces las albóndigas a la salsa y dejar que se cocinen, a fuego suave, durante 10 minutos aprox.
