  1. En un cuenco grande poner la carne, los tomates secados al sol muy picados, las nueces, la albahaca, la ralladura de limón, el vino y el huevo. Salpimentar y amasar un poco los ingredientes. Incorporar la harina y amasar hasta que nos quede una mezcla bien homogénea. Dejar descansar 30´.
  2. Pasado ese tiempo formar las bolas de carne.
  3. Poner los hongos en remojo con agua templada.
  4. Pelar y picar la cebolla y los tomates. Poner un chorretón de aceite en una sartén honda y freír a fuego fuerte las albóndigas a fuego fuerte hasta que estén bien doradas.
  5. Retirar y reservar. En el mismo aceite poner la cebolla y rehogarla durante unos minutos con el laurel. Añadir los tomates y cocer hasta que la salsa esté un poco espesa.
  6. Volver a colocar las albóndigas y los hongos secos con su agua. Cocer unos 15´.
  7. Añadir los champiñones y dejar cocer otros 10´.
  8. Poner las judías picadas y proseguir la cocción 5´más.
  9. Poner los guisantes en la sartén y cocinar 5´.
  10. Si fuese necesario, agregar caldo durante la cocción hacerlo caliente. Yo usé caldo casero de pollo.
