- Sal
- Pimienta

- Mezclar los dos tipos de carne, salpimentar, añadir el huevo, el ajo y el perejil picaditos y el pan remojado en leche y bien escurrido, mezclar bien todos los ingredientes, dejar reposar un rato.
- Poner el AOVE en la sartén, calentar a fuego medio, ir haciendo bolitas con la carne, pasarlas por la harina y freír hasta que queden levemente doradas, sacar a una cazuela de barro y reservar.
- Freír en el mismo AOVE, la cebolla picadita, pochar, añadir las setas variadas, rehogar, añadir el vino blanco, machacar en el mortero las hebras de azafrán, recogerlas con el agua y añadir a la sartén, volcar todo a la cazuela de barro donde están las albóndigas, dejar cocer 10 minutos aproximadamente, mover la cazuela para que ligue bien la salsa, en el último momento añadir los guisantes, apagar el fuego y dejar reposar tapadas unos minutos. Servir calientes.
